Coming Soon: Joe’s Live and Bub City Take Rosemont

Mark your calendars! Lettuce Entertain You is preparing to open a mega music venue and barbecue restaurant all under one roof on Thursday, February 25. The partners behind Bub City, Joe’s on Weed Street and the Windy City Smokeout are bringing two new ventures that will occupy 35,000 square feet at 5441 Park Place in the MB Financial Park.

As we get ready to open our doors, we have some ideas on how to combat the winter blues with remedies like live country music, barbecue, whiskey and craft beer. Start planning, because here is what you have to look forward to during Joe’s Live and Bub City’s opening month and beyond.

We’ll have you saying: “You heard it here first!”
Joe’s Live will play host to weekly lineups of country music’s biggest names, up-and-comers, local talent, DJs, and more. We can’t wait to see who they bring in because the original Joe’s Bar in Chicago’s Lincoln Park neighborhood has long had a reputation to be the spot to see future stars like Miranda Lambert, Brad Paisley and Dierks Bentley — we wonder who will make their breakout debut on the Rosemont stage?

To celebrate, we are throwing an opening event on Thursday, February 25, with a live performance from country music star Frankie Ballard, whose hits “Young & Crazy” and “Sunshine & Whiskey” have topped the charts. Festivities will continue throughout our opening month, with shows from:

And what better way to experience live music then that suite life?
Joe’s Live will give you the chance to go VIP all the way. The venue will unveil suites that are available to rent, complete with their own private entrance, phenomenal views of the main stage, two private bar areas and barbecue.

Did you say barbecue?

Attached to Joe’s Live is Bub City, open daily for dinner from 4:30 p.m. until late. The menu is crafted by chef / partner Doug Psaltis, with highlights including the original Giddy Up Fries and house-smoked meats. Other signatures include Bub’s General Joe’s Fried Chicken, All-American Double Barrel Burgers and the Nashville Hot Chicken. The first night of dinner service will be Thursday, March 3.

We will be smokin’ meats in-house…

Due to the sheer size of the new restaurant and music venue, the kitchen will have three Southern Pride smokers where chef/ partner Doug Psaltis will be working his magic and serving up house-smoked meats like the 18-Hour Natural Beef Brisket and BBQ Pork Ribs.

…and serving them up all day.

Shortly after opening, Bub City will start lunch service and highlight the “Meat & Three.” Pick one meat from Berkshire pulled pork, fried chicken, Atlantic salmon, spice rubbed ribs, 18-hour natural brisket and more and pair with three vegetables or sides like the signature spoonbread, giddy-up fries, corn off the cob, mac & cheese, pimento dip, etc. Hello meat sweats! On the weekends, come for the barbecue brunch and stay for the build-your-own Bloody Mary bar.

Saturday and Sunday mornings, Bub City will be dishing out their famous Southern-style brunch complete with the ultimate hair-of-the-dog, their DIY Bloody Mary bar.

Or stay even longer because after the party, there’s the after party…


Beyond the barbecue, beer and whiskey, there will be country music, live band karaoke on Tuesday nights starting at 10 p.m., acoustic bands Monday and Wednesday night, plus more.

…because as Frankie Ballard once said, “It all started with a beer.”

Yes, there will be craft beer. Yes, there will be more than 100 different types of whiskey to sip on. And yes, southern-style cocktails, sweet teas and more will also be available for drankin’.

We throw a helluva party at our house…
Both Joe’s Live and Bub City will offer event and private party options for groups ranging from eight to 1,500 guests. From corporate dinners and bachelorette parties to VIP experiences in one of the private rooms that overlook the Joe’s stage, family-style crab boils and much more, the space offers a wide variety of entertainment for groups.

…or we can take it on the road to yours.


In addition to in-restaurant event capabilities, Bub City also provides off-site catering and rents out “The Rig,” a mobile barbecue trailer that brings the barbecue experience right to your doors.
