Try Big Bowl’s New Vegetarian Menu

Big Bowl’s Executive Chef Raul Gutierrez says there was definitely a desire from guests (yes, you!) for more vegetarian-friendly options at the restaurant. So Chef Raul and his team set out to create veggie versions of some of Big Bowl’s most beloved dishes.
So, how do you make your favorite Chinese and Thai dishes vegetarian-friendly? Chef Raul and his team created a housemade roasted vegetarian broth with lemongrass and ginger in lieu of chicken stock, as well as substituting tofu for chicken, beef or seafood.
“The broth contains roasted vegetables that we season with lemongrass and ginger, which gives it the Asian essence and flavors. We also blanch instead of fry the green beans in the dishes,” explains Chef Raul. His favorite dishes on the new menu are the Tofu & Broccoli and Tofu Poké Bowl.
“The Tofu & Broccoli is full of flavor, it’s rich and savory. The Tofu Poké Bowl is a very refreshing dish, full of so many different textures and flavors. I love the added component of pineapple for sweetness, which pairs well with the cilantro-chili vinaigrette on top.”
