Bar Ramone’s cellar was designed to give guests a glimpse into a sommelier’s personal wine collection. What makes the wine bar’s cellar unique, is that much of it is comprised of hidden gems, often unavailable to most consumers. Bar Ramone’s Sommelier and Beverage Director, Richard Hanauer, gives us his suggestion as to what to order next.

Richard’s pick: The wine out of the cellar that I am opening this weekend is a Rosé: Clos Cibonne “Cuvée Speciale des Vignettes” Côtes de Provence Tibouren Rosé. Everything about this is cool. Starting with the vintage, 2009 , rosé is not meant to age, there are few examples that improve with age, but most are supposed to be consumed relatively close to their bottlings, and 2009 was a killer vintage in Provence. It is still as delicious and approachable as a traditional Provence Rosé, but with much more interesting textures from aging. The grape utilized, “Tibouren” isn’t a classic either but is the perfect vessel for the wine to age gracefully.

Osteria Via Stato’s wine collection features an extensive selection of Barolo, Barbaresco and Brunello, all offered at 50 percent off. Beverage Director, David Johnston walks us through his top pick from Osteria’s Italian wine list.

Dave’s pick: Arianna Occhipinti “SP68” Rosso, Sicily. Not only is this seriously fantastic Sicilian red 50 percent off, but it is only released in limited quantities every year. Occhipinti led the charge for terroir-driven, organic winemaking — something for which the region’s dry conditions are conducive — from local grapes like Nero d’Avola and Frappato, which are traditionally blended together.
