Chef Ozzie Ocegueda is serving up seasonal popsicles at Navy Pier at his new concept Ozzie’s Pops & Pretzels. Here is his recipe for Watermelon Paletas.

Watermelon Popsicles from Ozzie Pops & Pretzels
Serving size: 2 dozen pops

INGREDIENTS:
2 Watermelons
2 cups Simple Syrup
6 cups Water
½ cup Fresh Lime Juice
1 pinch of Salt

METHOD:
1. Cut watermelons into small pieces, reserving 2 cups of watermelon
2. Place remaining watermelon in a container with the rest of the ingredients and blend together
3. Place watermelon pieces in popsicle mold and fill with liquid
4. Freeze for 2 hours or until frozen solid
7. To remove, fill a sink with warm water and place molds in the water for 5-10 seconds
