As the weather starts to heat up, we are on the hunt for the perfect cocktails to cool down with. Enter, Osteria Via Stato’s new spring cocktail menu created by Beverage Director, Evan Salone. One of our favorites? The Stella Rosa, a cocktail that combines crisp white wine, bubbly Italian prosecco with tequila, fresh strawberries and thyme.

Here’s why these new cocktails are ones you will be drinking on the patio all spring and summer long.
“These drinks spotlight the flavors of Italy and use fresh fruits, vegetables and herbs that are at their peak at this time of year,” says Salone.
In addition to layering flavors and ingredients to create balanced cocktails, the team is also doing their best to eliminate waste and promote sustainable practices for Osteria Via Stato’s beverage program.
“When we pull basil leaves to make fresh pesto, the leftover stems are cooked into a syrup providing the basil essence found in our new cocktail, the Naples Sun,” says Salone.
Stella Rosa Recipe
Yields 1 drink
1½ oz Elena Walch Pinot Bianco
¾ oz Cazadores Blanco Tequila
¾ oz Strawberry Simple
½ oz Lime Juice
¾ oz Valdo Prosecco
1 Sprig of Thyme
Fresh Strawberry to Garnish
- Combine all ingredients (except prosecco) in a shaker, add ice and shake for 7 – 10 seconds.
- Double strain into a flute and top with prosecco.
- Garnish with a strawberry wheel skewered with a sprig of thyme.
