Why Riesling, You Say?

Short answer: Because it’s delicious.

Turn the Heat Up with Older Vintages: The list focuses on older bottlings, which posses savory and umami notes rather than sweet and fruity ones. This counterbalances ramen’s heat and range of spices.

Body to Body: It may seem counterintuitive, but the complex, intense body of both ramen and Riesling play well off each other. The secondary Asian spice notes from the ramen is balanced out by the roaring acidity of the wine, which acts as a flavor enhancer.
