Join RPM Steak for its third annual Winter Beef Series: a three-part educational class and dining experience. Taste your way through several courses of RPM’s exclusive collection of beef, with wine pairings to match, including:
- Monday, March 9: Australian Wagyu – Considered some of the world’s rarest and most exquisite type of beef prized for its rich marbling and dense meaty flavor, indulge in Black Onyx Nigiri with Santa Barbara uni and Kaluga caviar, Westholme Kushiyaki with sesame and miso and Cape Grim Short Rib with confit trumpet mushrooms and beef-fat vinaigrette. The Australian Wagyu Dinner is $225 per person, plus tax (gratuity not included). NOTE: A portion of proceeds from this Australian Wagyu dinner will go to benefit the NSW Rural Fire Service.
- Monday, April 6: Vintage Beef from Beeman Ranch – Understand and appreciate the nuances of vintage steaks from Beeman Ranch out of Harwood, Texas. Enjoy dishes including Peppered Beef Carpaccio with salt-cured egg, Braised Prime Short Rib and a Delmonico Steak with olive oil fries and romesco. The Vintage Beef Dinner is $175 per person, plus tax (gratuity not included).
