WHAT: Starting February 2016, Intro will welcome Chef Jessica Largey as its next chef-in-residence. Largey will follow current chef-in-residence Stephen Gillanders, and will bring her culinary style to Intro’s evolving a la carte menu.
In a departure from her fine dining roots as former Chef de Cuisine at the renowned Manresa, Largey will explore a more accessible, yet equally creative and innovative California-inspired menu. Largey’s approach will be vegetable-centric, with dishes showcasing how they can be the star player of a dish, rather than just an accouterment. While the menu will not be vegetarian, meats and other proteins will play a secondary role.
The beverage program will continue to evolve, leading with a chef-driven cocktail program with offerings that reflect and complement Largey’s vegetable-focused offerings. The wine program will be a small and nimble global list, with offerings changing seasonally.
Guests can expect both an a la carte and a friends and family shared menu, allowing the versatility to accommodate any dining experience guests seek at Intro – whether it’s a weeknight neighborhood dinner or a sophisticated evening. As with the previous chefs-in-residence at Intro, Largey will add new dishes as she hones her menu over time. Pricing will range from $55–$70; further details will be announced in January 2016.
WHO: Chef Jessica Largey is the fifth chef-in-residence at Intro, Lettuce Entertain You’s award-winning rotating chef restaurant. A Southern Californian native, Largey is best known for her work at Manresa in Northern California as Chef de Cuisine with chef and owner David Kinch, and has also worked in the kitchens of Providence (Los Angeles), The Fat Duck (England), LAMILL Coffee Boutique (Los Angeles), and Bastide Restaurant (West Hollywood). Largey’s talent has been highly lauded by the industry – in 2013, she was named in Zagat’s “30 Under 30” list for San Francisco, and was a recipient of both StarChefs.com’s “Rising Star Chef” and Eater’s “Young Guns” award. In May 2015, she won the James Beard “Rising Star Chef of the Year” Award in Chicago – the first time the awards were held outside of New York City. As part of the festivities surrounding the Awards that year, she participated in a multi-chef collaborate on “Rising Star Chef” dinner series at Intro, hosted by Saveur, where her dish was a critical favorite.
