Operators are embracing all things New Orleans
Mardi Gras, also known as Fat Tuesday, will be celebrated on March 5 this year. The festive holiday — associated with New Orleans, decadence and big bashes — attracts revelers looking to party it up. Restaurant operators across the country want to be a part of the fun with special events and such dishes as sushi rolls with Cajun influences and tacos with fried alligator meat. This Schaumburg, Ill., concept from Chicago-based restaurant group Lettuce Entertain You Enterprises is ringing in Mardi Gras with a special maki roll: The Crazy Cajun Roll. The holiday limited-time offer, available Friday through Tuesday, features shrimp tempura, cucumber, spicy crawfish and lime zest. Tokio Pub will also host happy hour all day on Tuesday.
Oyster Bah, another Lettuce Entertain You Enterprises restaurant located in Chicago, will cook up a shrimp boil and a lobster boil — both with sausage and corn on the cob — on Tuesday to celebrate Mardi Gras.
