With chef/partner Doug Psaltis at the helm and a name that harkens back to the legendary VIPs-only table in the original Pump Room, Lettuce Entertain You’s latest concept in the old Pump Room space promises to balance nostalgia with a posh, supper club-y vibe. Dover sole, cote de boeuf, and roasted cauliflower comprise a selection of whole roasted items, while classic beef Wellington blanketed in mushroom bordelaise and classic caviar service shine among the mains and starters, respectively. In case you were wondering, yes, the famed Booth One table still exists and will be reserved for select celebrity guests, just as it was in its heyday.
