Hanauer oversees the enormous cellars at RPM Steak Chicago, RPM Italian in both Chicago and Washington,­ D.C., and a huge, new Windy City riverfront complex centered around RPM On The Water, the group’s largest venue to date. If that’s not enough, he’s also a partner and wine director at one of Chicago’s­ best wine bars, Bar Ramone, where the Spanish-inspired menu meets an eclectic global list.
