A rich and flavorful delicacy, wild Scottish grouse is one of the most sought-after game birds in the world, a favorite of both hunters and diners for its dark, resinous meat and earthy flavor. This November, Chef/Proprietor J. Joho is serving a limited supply at world-renowned Everest, bringing out full flavors of the fresh, premium meat in Crepinette of Wild Grouse Roasted in Alsace Cabbage. Each year only a small number of these birds are exported to overseas markets, making the wild Scottish grouse one of the most rare and expensive luxuries food lovers can have on their plates. Known as a pioneer in Chicago for using only American ingredients, this wild Scottish grouse is the one exception, and will be available only for the next month on the prix fixe menu (four-courses $94; five-course $120).
