From his start as a busser to his current role as an Executive Partner, Marc Jacobs has always applied his talent and passion to roles in the back and front of the house. He is the Vice President of the Foodlife Division which includes Antico Posto, Foodlife, Foodease, Mity Nice and Scoozi. Here is a brief look at Marc’s career with Lettuce, then and now.
What was your first job with Lettuce?
I was putting myself through school, and took every opportunity available when I started as a banquet busser at Bones restaurant. I quickly moved into the lead banquet server position, and also trained at the host stand for the main dining room. At the same time, I was trained to be a server, worked the carryout store and learned to expedite the line in the kitchen. Within one year, I was promoted to catering manager and continued on to learn the office duties and became the weekend office manager.
What do you like best about your current position?
I love the opportunity to teach and develop people in all positions at the restaurants.
I also enjoy the challenge of restaurant design. Having input on what the space will look and feel like, including developing floor plans, selecting finishes and creating menus, all help to define the culture and personality of the restaurant.
Who or what has been the biggest influence on your career?
My passion for food and travel is where it started for me. I have always enjoyed traveling to learn more about different cultures and explore their food and cooking techniques.
The person who has had the biggest influence on my career is Rich Melman. Working side by side with Rich at R.J. Grunts was a pivotal turning point in my career and reinforced my passion for the business.
What do you love about the restaurant industry?
Food! I love educating the guest…sharing things we’re passionate about with other people. I am also passionate about design.
What advice would you give people who are just starting their restaurant careers?
Focus on running the best shift. The attention you give to detail and the energy you bring to the floor every day is going to help promote you in the business. Also, always continue to develop and educate yourself.
