My first position with Lettuce Entertain You was as a host at Tucci Benucch at the Mall of America, the summer after my freshman year of college. The organization captured me from the very beginning with their thorough training, passion for food, innovative concepts, and wonderful people. I was amazed that there was a job out there that excited me so much, that I looked forward to going to each and every day. My experience at Tucci Benucch was life changing for me, and was the inspiration for my decision to change my major to Hospitality Management the next fall.
The following two summers, I participated in the Lettuce Entertain You Internship Program while working at L. Woods and R.J. Grunts. The experience was amazing and was really an affirmation for me that I was in fact on the right career path. After my college graduation, I spent four years working for P.F. Chang’s China Bistro in Indiana and Ohio before following my heart back home to Minnesota, and back to Lettuce Entertain You. I had kept in touch with Scott McCabe and Dan McGowan during my absence from the company, and they made my transition back extremely comfortable and smooth. Having a strong background in Asian cuisine, Big Bowl was a perfect fit. It’s a concept I am very proud to represent.
