CHICAGO, IL – December 2014 – Dreamed up by the creative team of Nate Redner (Shaw’s bar manager), Luke Hornberger, Jacob Sembrano (Goose Island’s head brewer), and John Hall (Goose Island founder), the special brew is called Pearl, Shaw’s Commemorative Common. Designed to pair perfectly with Shaw’s seafood menu, namely its oysters, Pearl is a riff off a California Common, known for its medium body and malty, mildly fruity flavor, which is usually brewed with a special strain of yeast that works better at warmer temperatures.

Produced in the original Goose Island brewery, Pearl was brewed with a mix of Herkules and Mt. Hood hops and a blend of malts to offer a lightly toasty background. The beer also contains a touch of salinity and minerality from the use of oyster shells during the brewing process, as well as roasted lemon peel, which add subtle citrus notes. Yielding a total of only 18 kegs, Pearl, Shaw’s Commemorative Common, is truly a limited edition Goose Island beer. Diners will be able to enjoy it on draft throughout the early part of 2015 for $7 a pint. Those hoping for a sneak peek, and first sip, will have the chance to try the brew, paired with 1/2 priced oysters, at the Chicago location’s Goose Island release party on Thursday, December 11th from 4:00 p.m. to 6:00 p.m.
