Jerrod Melman is managing partner of HUB 51, adjoining nightclub SUB 51, Paris Club Bistro & Bar, Chicago’s premiere nightclub Studio Paris, RPM Italian, Bub City, Three Dots and a Dash Ramen-san and RPM Steak – all located in Chicago’s River North neighborhood in addition to M Street Kitchen and Stella Barra in Santa Monica, CA, West Hollywood, CA and Chicago, IL, and Summer House Santa Monica in Chicago’s Lincoln Park neighborhood.
Jerrod’s earliest memories of working in restaurants began at the age of 10 as a busboy at the original Maggiano’s. During high school and college, he held various roles in more than a dozen of the Lettuce Entertain You Enterprises (LEYE) restaurants, as well as In-N-Out Burger in Arizona.
The summer before his senior year in college, he participated in the LEYE internship program which solidified his interest in pursuing a restaurant career. After graduating from DePaul University with a bachelor’s degree in communications, Jerrod managed LEYE restaurants Osteria Via Stato and R.J. Grunts. He also gained valuable experience working with renowned hospitality groups in New York including BR Guest Hospitality and Union Square Hospitality Group.
In June 2008, along with his siblings, he opened HUB 51 and lower-level club SUB 51, offering Chicago’s River North neighborhood a unique mixture of dining, nightlife and entertainment. Since then, he and his partners have added several restaurants and nightclubs to their resume in Chicago and Los Angeles including a classic French bistro, Paris Club Bistro & Bar and adjoining nightclub, Studio Paris, modern Italian restaurant RPM Italian which they opened with celebrity partners Giuliana and Bill Rancic, Bub City, a BBQ joint with live country music and a tiki lounge, Three Dots and a Dash. To date, he has opened 13 concepts within LEYE, and a neighborhood ramen shop, Ramen-san that opened in Spring 2014.
In addition to restaurateur, Jerrod and his partners at Bub City teamed up to introduce Windy City Smokeout in July 2013, the Midwest’s premiere summer BBQ festival which brings together the best in live country music and BBQ.
Jerrod and his partners have several upcoming projects in the works and most recently expanded the RPM brand with RPM Steak, a modern, chef-driven steakhouse that opened in River North in August 2014.
A longtime Chicago resident, Jerrod is an avid supporter of several local philanthropic and community initiatives. He also enjoys playing basketball and softball, going to the movies, and a night out with good friends.
